“Kway Chap” or “Kway Teow Kia” at Johor Bahru

"Kway Chap" (Chinese : ç²¿æ±?) or "Kway Teow Kia" (Chinese : ç²¿æ¢?ä»”) was one of the famous TeoChew cuisine @ Johor Bahru.

Just like famous "Bak Kut Teh" (Chinese : è‚‰éª¨èŒ¶), "Kway Teow Kia" also served as one of the most popular breakfast & supper @ Johor Bahru for the passed 50 years. "Kway Teow Kia" contain – Broad rice sheets (Crystal like Kway Teow) in a soup made with dark soy sauce, served with pig offal, braised duck meat, various kinds of beancurd, preserved salted vegetables, and braised half-boiled eggs.

Everytime i visit Johor Bahru, the only food i would never miss is "Kway Teow Kia". Don’t ask me to describe how good taste it is….. i always said this, "If you love Bak Kut Teh, you will fall in love with Kway Chap easily" and you need to try it, then you will know how the Crystal like Kway Teow taste when put into your mouth is so fantastic smooth and full of aroma.

Jerry strongly recommend this two "Kuey Teow Kia" shop @ Johor Bahru as their taste & quality was proven with good reputation among our friends & folks @ JB.

1) Restaurant Hi Wan @ Jalan Sri Pelangi, Taman Pelangi (near Pelangi Leisure Mall,which next to 7-11 or opposite Mosque)

2) Restaurant Woon Kiang at 134 Jalan Lumba Kuda. (Near Stulang Laut or Behind Foon Yew High School)

Average spending per person from RM 5-10 depending on how many side dishes you order, just like me always had at least 2 bowl of "Kuey Teow"

Hairy Crab (大閘蟹) is a carefully cultivated gourmet gift from China idyllic Yang Cheng Lake are among the priciest in the seafood world. After the mid-autumn Mooncake Festival, gourmets eagerly await to feast on another seasonal Chinese delicacy which available only from late September to November. It’s time for the palm sized “Louis Vuitton of the Crabs World” – Hairy Crabs.

Today, Jerry want to share with you my favourite seafood – Hairy Crab … which make my saliva keep process when you mentioned the big name.

We able to get a private room @ Happy Valley Restaurant, KL. Kelvin’s Grandma & Mum sing us few song before the food is served. Cool~~

The Masterpiece – Hairy Crab

Chinese almost revere hairy crabs, loved just as much as abalone and shark’s fin. In season, the hairy crabs are served across the finest table from Shanghai to Hong Kong, Taiwan to Malaysia and even Chinese demand for them in Chinatowns from London to New York.

Compared to the normal edible crab, “Hairies” are an unattractive dark green or grey-blue, appearing scrawny. Flip the Hairy Crab over and underneath is a coating and mossy hair covering its legs and bottom shell that give it its name. But hidden within the shell is the prize – the rich, creamy golden roe.

Known also as Eriochair Sinensis – mitten crabs (Da Zha Xie), Hairy Crabs are bred in lakes across the JiangSu province bordering Shanghai province in China’s east. But only crabs from the fresh water Yang Cheng Lake are deemed the original Hairy Crabs; their prestige label commands a much higher price than lesser crabs bred elsewhere.

Lying north-east of Suzhou (one of the region’s more prosperous cities), Yang Cheng Lake is prized for its unpolluted waters that are rich with micro organisms and ideal as the crabs mature in September when they are plump and their flesh tender and rich with roe.

It’s also the crabs’ mating and spawning season, which is when they migrate downstream to the Yellow Sea via the waterways of satellite city Kunshan. Alas, for the mature crabs, their journey is cut short as most end up in the nets and baskets of eager fishermen.

It’s common to see long lines of people queuing patiently at morning markets to get their hands on the crabs arriving fresh from the lakes and sold in bamboo baskets.

Prices reflect the hairy crabs’ prestige.This is not the average made-in-China product. The Shanghai Jinhai Food Co. Ltd, which is the city’s sole authorized trader of Yang Cheng Lake Hairy Crabs, retails a Kilo of female crabs at 320 Yuan (RM 149) and 280 Yuan (RM 130) for male crabs.

Female crabs tag higher price due to it adored for their roe but still some people like the male crabs for the sperm and sweeter flash. After steamed, the sperm become a frothy mass that is delicately crusty with a taste comparable to the roe.

According to StarMag, Top quality hairy crab fetch up to US$100 (RM 375) per pound and sales topped US$50 million (RM 185 million) in China alone last year. Although 1kg costs around a week’s pay for the average Shanghainese, they’re still queuing up to get a taste!

The United States Foreign Agricutural Service was prompted to issue a statement on “Carbmania” in its global agricultural network: “The Hair Crab Phenomenon has highlighted the fact that consumers are very sensitive to quality and niche markets, as in the case of Yang Cheng Lake crabs, that fall into the happy category of prestige items whereby they confer status on those who buy them.”

How do you eat a Hairy Crab?

Recommend preparing in traditional way – steamed whole to preserve hairy crab delicate flavor and moisture; the meat s then served hot or cold, Teochew Style.

As the crabs are said to have a “Cooling” (Yin) effect on the body (as per Chinese beliefs of Yin and Yang), Chef can actually balances it’s by steaming the crabs with dried perilla leaf or serve with a cup of hot ginger tea.

Used traditionally as herbal medicine, the dark purple leaf’s pungent properties help “warm” the body and its faint fragrance does not interfere with the wonderful “crabby” flavor.

Hairy Crabs are never seasoned. All they need is steaming to draw out their lovely flavor. Hairy Crab can be taken with a traditional Shanghai dipping sauce of vinegar, soy sauce and ginger.

Once steamed for about 20 minutes, the crab shells turn a vivid vermillion – finally looking appetizing, I think.

Ipoh and Teluk Intan Famous Cuisine

The town of Ipoh & Teluk Intan in Malaysia is famous for its cuisine like "Teluk Intan Chee Cheong Fun", "Ipoh Beansprout Chicken Rice" "Ipoh Soya Milk & Tofu Flower, " Ipoh White Coffee" and etc etc.

Natives claim that Ipoh’s water, which is relatively hard (high alkali content) owing to Ipoh’s location on top of a large karstic formation, makes the food especially tasty.

My friends always ask me: "why you always travel to Ipoh? you have girlfriend(s) there?!!"
The answer is ~ i like the food there & Jerry always travel for good food!!

Now, let Jerry share with you the few famous cuisine @ Ipoh & Teluk Intan, Perak …….

1. Teluk Intan "Chee Cheong Fun" (Cantonese – è±¬è…¸ç²‰)

This is a breakfast dish which consists of large flat pieces of flat rice noodles rolled up and served with sweet or spicy sauce. Unlike the chee cheong fun in Kuala Lumpur, Teluk Intan has it with minced pork sauce and mushrooms, topped with preserved green chilli, a sprinkle of deep-fried shallots and sesame seeds.

2. Beansprout Chicken Rice (Cantonese nga choy kai – èŠ½è?œé›ž)

This consists of steam chicken meat, assorted chicken innards and beansprouts boiled in the abovementioned hard water and served with soy sauce and sesame oil. worth to mentioned , due to Ipoh’s water, Ipoh’s bean sprouts are shorter, thicker and difficult to find elsewhere.

3. Ipoh Soya Milk & Tofu Flower – Dessert (Cantonese – è±†æ¼¿ & è±†è…?èŠ±)

Ipoh is also a famous production hub for tasty light soya sauce, dark soya sauce, Soya Milk & Tofu Flower. This "Lai Kee" was just stone throw away from the above mention "Onn Kee" Chicken rice.

4. Indulgence Restaurant & Jazz Room

Julie Song, the proprietor of Indugence believes in titillating all senses from the ambience where customers can so choose to dine in a Moroccan room, at the courtyard cafe or just lounge at the bistro. For a little privacy, a dining room is set for 8 to 10 people right next to a little garden. Aroma from freshly baked breads like the country breads, tomato rolls and basil buns wafts through and encapsulates diners, possibly turning each and everyone into salivating puppies waiting to be fed anything and everything!

5. Restaurant Bukit Tambun

Easily assessable from the PLUS,exit of Ipoh, a 30-minute drive from the toll exit. The place will be crowded, especially on the weekends, with locals and foreigners alike. Do try the live crabs, prawns, fish, oysters, seashells and etc etc. This restauant was a bit pricy compare to others in Ipoh, i still prefer "Mun Chong" Restaurant @ Ipoh town which earlier mention in my blog post, it is much more tasty & value for money.
